Archive a custom ingredient — withdraw it from active use. Soft: never a hard delete, the entity stays readable and pinned references in existing recipes are undisturbed. An archived ingredient is rejected from NEW recipe composition; use `unarchiveCustomIngredient` to reverse. Idempotent: re-archiving an already-archived ingredient returns the existing `version_id`.
